Peach, Goat Cheese, and Basil Bites

- 18 wonton wrappers, cut in half diagonally
- 2 medium peaches, diced
- 4 oz goat cheese
- 8 basil leaves, julienned
- 2 tablespoons Fustini's Basil Crush olive oil
- Kosher salt
- Fustini's Riserva balsamic

- Preheat oven to 350 degrees F. Drizzle olive oil into two large sheet pans. place wonton wrapper halves evenly on sheets, and sprinkle with sea salt. Bake for 7-8 minutes or until golden brown.
- Once the wonton wrappers have cooled, spread each triangle with about ½, tablespoon of goat cheese and add about 1 tablespoon of diced peaches. Drizzle with your balsamic reduction then garnish with basil ribbons. Serve immediately.
Recipe Note
For more citrus flavor, substitute the Meyer Lemon or Persian Lime olive oil. Adapted from ambitiouskitchen.com
