Pork Chops with Garlic Cream Sauce

- 4 boneless pork chops
- Kosher salt & fresh ground pepper
- 2 tablespoons Fusitni's Sage and Wild Mushroom olive oil
- 8 oz baby Bella mushrooms, sliced
- 1 small sweet onion, sliced
- 2 garlic cloves, minced
- 2 tablespoons Fustini's Thyme balsamic
- 1/2 cup heavy cream
- 1/2 cup freshly grated Parmesan
- 1 teaspoon dried oregano
- pinch of crushed red pepper flakes
- 3 cups packed spinach
- fresh thyme for garnish
Directions
- Season pork chops on both sides with salt and pepper. In a large skillet over medium heat, heat olive oil. Add pork chops and cook until golden and cooked through. Remove from skillet and place on a plate to keep warm.
- Add mushrooms and onion to the same skillet and cook until softened, 5 minutes. Add garlic and cook until fragrant, 1 minute more.
- Deglaze pan with balsamic. Stir to loosen all bits of flavor and simmer for 1 minute to reduce the liquid. Add heavy cream, Parmesan, oregano and a pinch of red pepper flakes. Season with salt and pepper. Bring sauce to a simmer and cook until thickened, about 3 minutes. Add spinach and cook until wilted.
- Return pork chops to the skillet and cook until warmed through. Garnish with fresh thyme if desired.
