Salmon Burgers with Green Goddess Sauce

Ingredients

1 pound boneless salmon filet or 16oz canned salmon
- 1 shallot minced
- 2 garlic cloves minced
- 1 large egg
- 1/3 cup seasoned bread crumbs
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh basil

3 to 4 tablespoons of Fustini's Gremolata olive oil
- sliced avocado for topping
- lettuce for garnish
- buns whichever size fit your burgers! toasted if desired
- lemon wedges (optional)
- 1 avocado
- 1/2 cup mayonnaise
- 2 garlic cloves
- ¼ cup chopped parsley
- 1/4 cup chopped basil
- 2 tablespoons snipped chives

1-2 tablespoons Fustini's Citrus Oregano balsamic
- salt and pepper
Green Goddess Sauce
Directions
If using whole salmon fillet, cut into four pieces and add to the food processor. Pulse until it is in small pieces but not completely ground up. Remove the salmon and put it in a large bowl. Add the shallot, garlic, egg, bread crumbs, paprika, salt and pepper, basil and parsley to the bowl. Stir with a large spoon to combine then bring the mixture together with your hands. Form the mixture into 4 burgers, 8 sliders, or however many you want so they fit the size of your buns!
Heat a large skillet over medium heat and add 2 tablespoons of olive oil. Add the burgers and cook on both sides until golden brown, about 2 to 3 minutes per side. You want the insides of the burger to be opaque. To assemble the burgers, add the greens on the bottom of the bun. Place the burger on top, followed by the avocado and green goddess sauce. Serve immediately!
Air Fryer Instructions
- If using an air fryer. Add 1 tablespoon of olive oil to a sheet pan. Place formed patties on the pan and freeze for 1 hour before cooking. When cooking drizzle both sides with olive oil when placing them in the air fryer. Cook at 400 degrees F for 8 minutes on one side, flip, and another 5 minutes on the other side.
Green Goddess Sauce
- Add all ingredients to a food processor and blend until combined.
