Sausage Feta Stuffed Tomatoes

- 3 Italian sausage links, casings removed
- 4 oz crumbled feta
- 8 plum tomatoes
- Kosher salt & fresh ground black pepper
- 3 tablespoons Fustini's 18 Year Traditional balsamic
- fresh parsley chopped

- Preheat the oven to 350 degrees F. In a large skillet, cook sausage over medium heat until no longer pink, 4-6 minutes, breaking up into crumbles. Transfer to a small bowl and add 1/2 of the cheese, salt, and pepper to taste, and parsley. Mix well.
- Cut tomatoes in half lengthwise. Scoop out the pulp, leaving a 1/2" shell. Discard the pulp. Spoon the sausage mixture into tomato shells and place in an ungreased 9x13" baking dish. Top with remaining cheese and drizzle with balsamic. Bake uncovered until heated through, 10-12 minutes.
