Whipped Feta with Honey and Pistachios

Ingredients
- 4 oz feta cheese (feta in brine is easier to blend)
- 4 oz cream cheese, softened
- 1 tablespoon Fustini's Herbs de Provence OR Gremolata olive oil
- ½ teaspoon minced garlic
- ½ teaspoon dried basil
- ¼ cup honey
- 1 tablespoon chopped pistachios
- ¼ teaspoon cracked black pepper
- Slices of toasted pita or crackers or crostini

- Whip feta and cream cheese in a food processor with olive oil until smooth. Add the garlic and dried basil and whip again. Put the cheese mixture in a shallow bowl and make a well in the middle and fill with the honey. Sprinkle with the chopped pistachios and the cracked black pepper. Serve with pieces of crostini or warm pita bread.
