Preheat grill to medium-high. Shave zucchini and yellow squash into long strips using a vegetable peeler or mandolin. Skewer zucchini, yellow squash, and cauliflower. Drizzle with olive oil and season with salt and pepper.
Grill, turning occasionally, until vegetables are tender and slightly charred, 10 to 12 minutes. Crumble with feta.
