Onion, Apple and Cheese Gratin

- 3 large onions, chopped
- 2 medium Granny Smith apples, cored and chopped
- 2 tablespoons Fustini's Garlic olive oil, plus more for greasing
- 1/2 teaspoon dried thyme
- salt to taste
- 1/4 teaspoon crushed red pepper
- black pepper to taste
- 1 cup torn crusty bread
- 1/2 cup shredded Gruyere cheese, divided
- 1/2 teaspoon dried sage, crushed
- 1/4 cup heavy cream
- splash of Fustini's Michigan Apple balsamic (optional)

- Preheat the oven to 425°,. Place onions, apples, olive oil, thyme, salt, crushed red pepper, and black pepper in a large baking pan. Toss to combine. Roast until browned and very tender, 20 to 25 minutes.
- Meanwhile, generously grease a 1 1/2 quart baking dish. (Or six 6- to 8-ounce individual casserole dishes.) Set aside.
- Add bread, 1/4 cup cheese and the sage to the onion mixture. Stir to combine. Transfer mixture to prepared baking dish, pour cream over mixture. Top with remaining 1/4 cup cheese and a splash of balsamic. Bake until bubbly and brown, 25 to 30 minutes. Let stand 10 minutes before serving.
Recipe Note
Thyme balsamic gives it a little bit of a kick, but you can certainly omit it if you want to stay with a creamy texture. adapted from midwestliving.com
