Ingredients
- 1 red pepper, 2" pieces
- 1 zucchini, sliced 1" thick
- 8 oz small mozzarella balls
- 3-4 slices day-old brioche or ciabatta, cubed
- 1-pint cherry tomatoes
- 1/2 red onion, large chopped
- 1 tablespoon Fustini's 18 Year balsamic
- 1 tablespoon Fustini's Basil Crush olive oil
- Fustini's Parmesan Spice
- salt and pepper to taste
- fresh basil, chiffonade for garnish
- 8-10 skewers
Directions
- Thread red pepper, zucchini, tomatoes, onion, mozzarella, bread in the desired order. It is best to put mozzarella next to bread so that it melts into the bread. If using wooden skewers, soak in water 20 minutes. Preheat grill. Combine vinegar, oil, spices, salt and pepper. Brush over skewers. Grill until char marks appear. Remove from heat and garnish with fresh basil.
