Ingredients
Ingredients
- 2 15-ounce cans black beans, rinsed and drained
- 1 15-ounce can white corn, drained
- 1/2 green bell pepper, chopped
- 1/2 red bell pepper, chopped
- 4 green onions, thinly sliced
- 1 avocado, cubed
- 2 mangos or peaches, peeled and sliced
- 2 tablespoons Fustini's 18 Year Traditional balsamic
- 2 tablespoons Fustini's Cilantro and Onion olive oil
- salt and pepper to taste
Directions
- in a large bowl, gently combine black beans, corn, bell peppers, green onion and avocado. Add Fustini's 18 Year, Fustini's Cilantro and Onion olive oil, salt and pepper, mixing gently. Arrange mango or peach sliced on a plate and top with bean salad.
